Ingredients

  • 2 Tbsp. Ghee
  • 1 Cup carrots, chopped
  • 3 Celery stalks, chopped, ¾ cup
  • 1 Large onion chopped, ¾ cup
  • 4 garlic cloves, crushed
  • 3 Tbsp. tomato paste
  • 600 g minced meat, cheep trimmed of fat
  • 2.5 cup chopped tomatoes
  • ½ cup crushed tomatoes
  • 1 Tbsp. Sweet red bell pepper paste
  • 1 Tbsp. dried oregano
  • 1 cinnamon stick & 2 bay leaves
  • 1 Cup. Goat milk
  • 1 Tsp. apple cider vinegar
  • 1 Tsp. black pepper
  • 2 Tsp. paprika
  • 1 Cup Spinach, chopped.
  • 2 Tbsp. Parsley
  • 1 Cup sweet potato, mashed
  • 400 g spelt spaghetti

Method

    In a large skillet over medium heat, heat ghee. Add the onion, celery, carrot and garlic and cook until it becomes soft and tender (for around 6 min).

    Add tomato paste and stir until combined, then add the minced meat and cook until no longer pink (around 8 min.).

    Add the crushed tomatoes, oregano, sweet red bell pepper paste, bay leaves, cinnamon stick, apple cider vinegar, and milk. Season with pepper and paprika and stir until combined.

    Bring to boil, then cover and simmer for 20 minutes.

  • 5

    Add the parsley, mashed sweet potato and spinach and mix then cook for another 5 min.

  • 6

    In a separate pot cook the spelt spaghetti with boiling water until ready to eat.
