- 2 cans black beans or kidney beans
- 2 cups corn (canned and drained, frozen, or fresh cooked)
- 3 medium tomatoes
- 1 bunch cilantro (Coriander)
- 4 green onions
- 1 Tbsp. olive oil
- 2 Tbsp. lemon juice
- Salt and pepper

1Drain and rinse the beans and corn.
2Finely chop the cilantro, green onions and tomatoes.
3Combine all veggies in a large bowl.
4Mix oil, lemon juice, salt, pepper and cumin together in a small bowl.
5Pour oil mixture over salad ingredients and toss lightly.
